Salted vs. Unsalted Butter
Most baking recipes call for unsalted butter so you have complete control over sodium levels. Standard salted butter contains about 1/4 tsp of fine salt per stick (113g). If substituting salted butter for unsalted, reduce added recipe salt by 1/4 tsp per stick.
European vs. American Butter
American butter has an 80% milkfat minimum, while European styles (Kerrygold, Plugra, President) feature 82% to 84% butterfat. European butter produces flakier pie crusts and puff pastry due to lower water moisture content.
